This meatloaf recipe was one of my favorites growing up. My mom would cook dinner every weeknight, and now that I’ve started my own family, I’ve carried on that tradition in my own home. So, it only makes sense that I would bring some of my favorite childhood recipes to the dinner table for my own child! This meatloaf is so moist and tasty, you won’t even want gravy! And as a bonus, this recipe takes only minutes to prepare, which is especially helpful on a busy weeknight.
MOM’S MEATLOAF
MOM’S MEATLOAF
Prep-to-Eat Time: Approx. 1 hour
Ingredients:
2 lbs. ground beef
1 cup Italian style breadcrumbs
1/2 cup ketchup
1 white onion, diced
2 eggs
Directions:
Preheat oven to 350 degrees.
Mix together all ingredients until well-combined.
Bake at 350 degrees in a greased loaf pan for 45 minutes.
Serving Suggestions:
Cover your food groups by adding a vegetable and a starch to this meaty dish. Garlicky mashed cauliflower is a tasty way to introduce this vegetable to your kids. And roasted red skin potatoes can go right in the oven with your meatloaf and cook alongside it.
