It’s summer (so my hair is telling me) and while “business” may slow down and many people are enjoying a needed holiday, here are on a few things on my mind this month:

I am excited about… happy hour. Summer is the perfect opportunity to catch up with friends over a refreshing drink by the pool or during brunch. This recipe for “amaretto slush” is perfect for either one. It is delicious and refreshing on a hot Florida day. Yum!
AMARETTO SLUSH
1-12 oz. can frozen lemonade concentrate
1-12 oz. can frozen orange juice concentrate
1 cup sugar
6 cups water
1-Fifth of amaretto liqueur (could also use peach brandy)
4 bags green tea
7-Up or Sprite
Cherries and orange slices (for garnish)
Steep tea bags in 2 cups of the water for 5 minutes. Mix remaining ingredients, including the 4 remaining cups of water.
Freeze.
When serving, mix 2/3 frozen slush to 1/3 of 7-Up or Sprite. Garnish with a cherry and orange slice.
I am headed to…the water! I love the summer, the extra hours of daylight and getting out on the water to enjoy what the beautiful Space Coast has to offer. I’m ready to slather on the sunscreen, don my floppy hat and relax.
