Happy Halloween everyone! Here’s a dish that is sure to spook your guests!
Prep-to-Eat Time: Approx. 25 minutes
Ingredients:
2 lbs. ground beef
1 cup Italian style breadcrumbs
1/2 cup ketchup
1 white onion, diced
2 eggs
1 box lasagna pasta
1 3-oz. mozzarella ball
1 can pitted large black olives
1 jar marinara sauce
Directions:
Preheat oven to 350 degrees.
Mix together all ingredients until well-combined. Shape the mixture into a round dome and place it in a greased 9×13 baking dish. Bake at 350 degrees for 45 minutes.
While meatloaf is baking, prepare pasta according to package directions, then drain. Heat marinara sauce in a separate pot on the stovetop.
When the meatloaf is ready, remove it from the oven and top with marinara sauce. Cut the mozzarella ball in half. Layer the pasta strands one by one over the meatloaf to look like a mummy’s wrappings, adding the mozzarella and two olives for eyes as shown. Surround the meatloaf with more olives. Serve with the sauce on the side.
Serving Suggestions:
Serve with goblin fingers (sliced ham and turkey deli meat; spread one side with a thin layer of cream cheese; roll; put a halved cherry tomato on the end to emulate a finger with a red nail) and goblin eyes (deviled eggs topped with a thin slice of a green olive with pimiento to emulate eyeballs).
