This chicken dish combines some of my favorite ingredients. The chicken stays moist and everything combined brings out some really great flavors. I tend to keep most of these ingredients stocked in my pantry, which makes it an easy to make last-minute meal. This recipe is a great way to add some new and interesting flavors to your simple baked chicken.

 

ARTICHOKE PALM CHICKEN

Prep-to-Eat Time: Approx. 40 minutes

 

Ingredients:

4 boneless, skinless chicken cutlets

1 can diced tomatoes with roasted garlic and onion

1 can artichoke hearts, quartered

1 can salad cut palm hearts

1 can large pitted black olives

1/2 jar sliced mushrooms

Garlic powder

Salt

Pepper

 Directions:

Preheat oven to 350 degrees.

Place chicken cutlets in a shallow baking dish. Pour can of diced tomatoes over the chicken.

Evenly add the artichokes, palm hearts, olives, and mushrooms over the chicken.

Sprinkle generously with garlic powder, salt, and pepper.

Bake at 350 degrees for 30 minutes.

 Serving Suggestions:

Couscous makes a great accompaniment to this dish. You can serve the chicken mixture right on top of your couscous.
