Bakewell Tart
Friday, Nov. 12, 6-8:30 p.m.
Learn to bake this most English of confections consisting of a
shortcrust pastry shell beneath layers of handmade jam, sweet
almond-flavored frangipane custard and a topping of flaked
almonds. It is a variant of the Bakewell Pudding, closely associated
with the town of Bakewell in Derbyshire. While tarts are baking,
participants learn to make Chantilly Cream and will get to sample
this delicious pastry with a cup of tea or coffee. $129
Thanksgiving Italian Macarons
Friday, Nov. 19, 10 a.m.-4 p.m.
Make and decorate Thanksgiving-themed Italian macarons with
Mary Storey of Mary Storey Confections. This is an intermediate
level class, so some macaron/piping experience is required.
Students return home with a selection of festive flavors to share
with friends and family. $159, lunch included
Estrella Bread — Chocolate Hazelnut Crunch
and Frangipane Berry
Saturday, Nov. 20, 10 a.m.-3 p.m.
Learn to make not one, but two of these spectacular Estrella
breads, making the dough from scratch, plus choice of homemade
chocolate hazelnut crunch filling, frangipane and lingonberry or
cranberry fillings. $179, lunch included
Fabulous Focaccia
Saturday, Nov. 27, 10 a.m.-12:30 p.m.
Focaccia is like pizza, only better. Usually flavored with herbs and
extra virgin olive oil, but you can flavor and top with whatever you
like. You can even make a sweet version using grapes, figs, or
cherries. $99
Biscotti
Saturday, Nov. 27, 3-6 p.m.
Participants will learn to bake this Italian cookie that is first baked
in a loaf and then cut into slices and baked again. The resulting
cookies are crunchy and are excellent when served with coffee, tea
or cappuccino. Each participant will make two varieties of biscotti
and go away with a variety of recipes. This is part of the academy’s
Edible Gifts Series, so in addition to the baked goods, students also
receive a selection of beautiful jars and packaging to wrap up the
treats for gifting. $149
Italian Rainbow Cake or Venetian Cookies
Saturday, Dec. 4, 10 a.m.-4 p.m.
Students will create festive Italian Rainbow Cake, chocolate
ganache, chocolate lace, and gilding in this full-day class. $179,

Hot Chocolate Bombs — Winter Wonderland
Monday, Dec. 6, 6-8:30 p.m.
Saturday, Dec. 18, 10 a.m.-12:30 p.m.
In this hands-on class, students make the season’s hottest trend,
Hot Chocolate Bombs, and can choose to fill bombs with hot
chocolate, coffee, latte, mocha or sweets. They will also learn the
art of tempering chocolate for perfect results. Students not only
get to enjoy the taste of the bombs during class, but they also get
to bring home all the bombs they make. Class fee includes a set of
three-piece molds to make more bombs at home. $149
Winter Wonderland Cupcake Decorating Class
Friday, Dec. 10, 10 a.m.-2 p.m.
With a dozen freshly baked Black Magic cupcakes, students learn
to make a chocolate spice buttercream and other flavor options,
as well as work with homemade marshmallow fondant to create
a selection of winter wonderland-themed cupcakes. Other skills
taught include: simple modeling, using texture mats, plunger
cutters, modeling tools and using petal dusts. $149
Baked Brie en Croûte, Homemade Crackers
and Mixed Berry Compote
Friday, Dec. 10, 6 p.m.-8:30 p.m.
Rich, luxurious brie encased in buttery puff pastry with choice of
dried fruits, nuts, sweet or savory fillings is what the class is all
about. Students make one large Brie en Croûte or a tray of mini hors
d’oeuvre-sized delights, plus learn to make homemade crackers
and a mixed berry compote to accompany the masterpieces. $129
Chocolate Biscuit Cake Baubles
Edible Gift Series
Saturday, Dec. 11, 10 a.m.-3 p.m.
Reputedly Queen Elizabeth’s favorite treat, Chocolate Biscuit Cake
Baubles are rich and delicious. The recipe makes 18 mini baubles
or 2-by-6 inch domes or nine minis and a 1-by-6 inch dome so
students have lots of options for gift giving. $199, lunch included
Festive Gingerbread House
Sunday, Dec. 19, 10 a.m.-4 p.m.
Students learn the secrets to making festive gingerbread houses
using a traditional or spiced, chocolaty gingerbread for the recipe.
Learn design hand cutting, royal icing, correct consistency for
assembly, use of molds piping, edible glass panes and the use
of luster dusts for painting and highlighting. Students take their
masterpieces home, along with templates, recipes and the skills to
recreate gingerbread house variations throughout the year. $199,

Schnecken, Oh My!
Tuesday, Dec. 21, 10 a.m.-2:00 p.m.
Ooey, gooey and oh so cinnamony, schnecken means snail in
German and these rolls are named because their beautiful swirls
look like a snail’s shell. $129
Bouche de Noelle Yule Log
Wednesday, Dec. 22, 10 a.m.-3 p.m.
Students discover secrets to preparing and rolling the sponge
— without breaking — and creating the marzipan mushrooms
and sugar-paste leaves and berries that adorn the completed
log. Recipes for a variety of traditional and modern fillings, the
traditional meringue mushroom adornments and a selection of
frostings will be provided. $199, lunch included
