NY FATHER-SON TEAM OPENING PIZZA RESTAURANT IN PALM BAY
Co-founder of successful retail company
J.McLaughlin, Jay McLaughlin and his
son Chris McLaughlin are expanding
their restaurant rolodex to include Palm
Bay. This is the fourth restaurant for the
father-son team and second pizza concept.
Other restaurants include Island
(est. 1985) on New York’s Upper East
Side, Citron Bistro (est. 2014) and Station
49 (est. 2017) in Vero Beach.
When Jay and his wife Joan relocated to
Vero Beach in 2012, they saw that Florida
was missing the high quality, full service
pizza restaurants that they so enjoyed in
New York. Fast forward to 2022, the family
is opening their second wood fired pizza
restaurant in Palm Bay. Their focus is on
creating a welcoming and relaxed dining
experience with premium ingredients and
cooking techniques at affordable prices.

interior design. The Melbourne/
Palm Bay area is particularly exciting to
Jay and Chris (who joined forces with his
father in 2016) as there is a large population
across many age demographics; they
hope they’ll find their cuisine and the
location is a great fit.
“We were patient looking for a new
space. We really wanted to ensure that
we had fine-tuned our concept for expansion
to a new market and didn’t rush
it. We feel great about where we’ve gotten
with our team in Vero Beach and look
forward to offering the Station 49 experience
in Palm Bay,” says Jay McLaughlin.
“The project grew in scope from our
initial plans and we’ve completely
transformed the entire space and the
result is going to be really special. We’ve
built out a brand new kitchen featuring
a wood fired oven that we shipped
in from Italy. We feel pizza shouldn’t be
reserved for take-out and delivery, it can
be an elevated, social, dining experience.
Everything on our menu is designed for
sharing” says Chris McLaughlin.
The new restaurant, slated to open in
April, will seat 100 plus a seven seat bar.
A large covered outdoor patio has direct
views of the Indian River as well as an
intimate and lively setting inside with
a semi-open kitchen where patrons can
watch their pizzas being made.
