Blue Cheese Stuffed Tomatoes

  • 32 Cherry tomatoes
  • 1 Shallot
  • 1 cup Blue-veined cheese, crumbled
  • ½ cup Parmesan cheese, grated
  • ½ cup Mayonnaise
  • ½ cup Sour cream
  • ¼ tsp. Black pepper
  • ¼ cup Italian parsley leaves
  • ¼ tsp. Smoked paprika

Slice a thin piece off of the stem end of each tomato. Scoop the flesh from inside of the tomatoes, so what remains is a tomato cup. In a food processor, finely chop the shallot. Add remaining ingredients to the processor and pulse until well combined. Scoop the cheese mixture into a large zip-top bag and seal, squeezing out the air. Cut about ½ inch from one corner from the bag and pipe the cheese mixture into tomato cups. Sprinkle with smoked paprika.

 

Saltimbocca Con Pesto Satay

  • 1 Pound, boneless/skinless chicken breast
  • 20 Slices of prosciutto
  • Fresh sage leaves
  • 5 Thick slices provolone cheese, each cut into 5,1/4” wide sticks
  • Salt and pepper
  • (20) 6” bamboo skewers
  • 10 oz     Fresh pesto
  • 4 Tbsp.   Olive oil

Cut chicken breast into 1 ounce tenders, thread each onto bamboo skewer, salt and pepper. In a large skillet, add olive oil and brown skewers over medium heat. Do not totally cook chicken. Remove from pan, let cool for 5 min. Place 2 sage leaves on browned chicken, followed by 1 provolone stick, then roll entire chicken Satay with 1 slice of prosciutto. Bake Satays at 350 for 12 min., remove from oven and drizzle with pesto.

 

Up-Side Down Deviled Eggs

  • 1 dozen Hard-boiled eggs
  • 4 Ounces   Diced smoked salmon
  • 2 Tbsp. Heavy Mayonnaise
  • 2 tsp. Heavy cream
  • ¼ tsp. Pepper
  • 6 ounce Jar of small capers
  • ¼ tsp. Smoked paprika
  • 1 cup Vegetable oil
  • (24) Disposable oriental soupspoons

Dice egg whites into small squares, set aside. Fry capers in 1 cup of oil, until crispy, drain on paper towel, set aside. In food processor, add egg yolks, mayonnaise, heavy cream and pepper, mix until smooth. Remove mixture.  Fold in salmon. Place 1 teaspoon of mixture on to spoon, top with diced egg whites and crispy capers, sprinkle with paprika.
